Ingredients
- 8 crackers
- 4 cooked scallop meat
- 150 g cream cheese
- 1 tsp mayonnaise
- Salt
- Pepper (freshly ground)
- 20 g caviar
Instructions

Slice the scallops crosswise in half. Place a slice on each cracker. Mix the cream cheese with the mayonnaise, salt and pepper.

Fill a piping bag fitted with a rosette tip with the cream cheese mixture and pipe a rosette onto each scallop. Top with half a teaspoon of caviar and serve.
