Italian-Style Creamy Meringues

Ingredients

  • 2 egg whites
  • 1 tbsp Lemon Juice
  • 100 g sugar
  • 1 tsp finely grated lemon zest
  • raspberry syrup
  • 150 ml whipping cream
  • 1 Tbsp vanilla sugar

Instructions

    Preheat the oven to 140 °C (Oven/Convection).

    Whisk the egg whites with the lemon juice until frothy, gradually adding the sugar and continuing to whisk until the mixture is pale, glossy, and forms peaks. Fold in the lemon zest. Mix a few drops of raspberry syrup into half of the mixture and color it pink. Fill each portion into a piping bag fitted with a large round tip and pipe walnut‑sized dots onto parchment paper on a baking sheet. Bake in the middle rack for about 45 minutes.

    Remove from the oven and let cool. Whip the cream with vanilla sugar until stiff peaks form, spread a little whipped cream over one meringue, and place another meringue on top.
