Italian-Style Artichokes

Ingredients

  • artichokes
  • water
  • Salt, lemon juice
  • butter
  • oil
  • 2 tbsp onions
  • parsley
  • Tomato sauce

Instructions

    Trim the required number of artichokes by cutting off the stems, remove the outer leaves, trim the top, clean the base, split each artichoke in half, separate the inner leaves and choke, blanch in boiling salted water with lemon juice until just tender, then transfer to a bowl of cold water, cool and set on a towel to drain.

    Heat a piece of butter and some oil in a sauté pan, add two tablespoons of finely chopped onions and an equal amount of parsley, cook for several minutes, then arrange the half artichokes opposite each other.
