Green Bean Lentil Salad

Ingredients
- 250 g green beans
- Salt
- 80 g Red Lentils
- 1 onion
- red chili peppers
- 2 tbsp white wine vinegar
- Pepper
- 3 tbsp oil
- 20 g freshly grated horseradish
- 8 slices pork sausage
- 12 artichoke hearts
- juice of ½ lime

Rinse, trim and cut beans into pieces. Cook in salted water for about 6-8 minutes. Drain, rinse with cold water and let drain. Cook lentils in salted water for 4-5 minutes. Drain and let sit.

Peel and dice onion. Clean chili pepper, remove seeds and rinse. Finely chop the pepper. Whisk vinegar with salt, pepper, oil and horseradish. Mix vinaigrette with lentils, beans, onion and chili. Cover and let rest for 30 minutes.

Drizzle artichoke hearts with lime juice and season with salt and pepper. Slice pork sausage into wide strips, roll them up and fold under the bean salad. Arrange artichokes and bean salad together on a plate.
