Ingredients

  • 3 eggs
  • 1 onion
  • 300 g Ground Beef
  • 300 g veal mince
  • 3 tbsp freshly chopped parsley
  • 3 tbsp breadcrumbs
  • Salt
  • pepper (ground)
  • 1 Carrot
  • 100 g freshly grated Parmesan
  • flour (for dusting)
  • 4 tbsp olive oil
  • 2 Garlic cloves
  • 3 tbsp olive oil
  • 425 g peeled tomatoes (1 can)
  • 1 bay leaf
  • 1 tsp sugar

Instructions

    Boil 2 eggs until hard, cool and peel.

    Peel and finely dice the onion. Mix the ground meat with the onion, 1 tbsp parsley, the remaining egg, and breadcrumbs in a bowl; season with salt and pepper. Place the mixture on a lightly floured surface and flatten into a long rectangle about 2 cm thick.

    Peel and cube the carrot. Cut the eggs lengthwise into quarters. Distribute the carrot, eggs, and remaining parsley over the meat layer and sprinkle with Parmesan. Carefully roll everything up, shape into a loaf, and gently dust with flour.

    Heat olive oil in an appropriate pan and brown the loaf all around. Remove and place it in a suitable roasting dish or braising pot. (!very delicate!)

    For the tomato sauce, peel and finely chop the garlic; sauté in hot olive oil in a saucepan. Stir in the tomatoes with 1 cup of water, add the bay leaf, season with salt and pepper, and simmer gently for 30 minutes.

    Pour the tomato sauce over the loaf, bring to a boil, cover, and let simmer gently for about 45 minutes, spooning sauce over the loaf repeatedly. Slice into rounds before serving.
