Ground Meat Roast with Egg

- 4 hard-boiled eggs
- 2 stale rolls (from yesterday)
- 1 onion
- 800 g mixed ground meat
- 1 egg
- Salt
- black pepper (freshly ground)
- 1 tsp dried thyme
- 4 tbsp olive oil
- 800 g new potatoes
- 2 rosemary sprigs

Preheat the oven to 180°C (356°F) with upper and lower heat. Peel the eggs. Soak the rolls in lukewarm water. Peel, finely dice the onion and sauté it in 1 tbsp hot oil until translucent. Remove from heat and add thyme. Wash the potatoes thoroughly, cut them lengthwise, place on a baking sheet, drizzle with oil, season with salt, and bake for about 40 minutes.

Combine the ground meat with the raw egg and the squeezed rolls, season with salt and pepper, and fold in the onions. Divide the mixture in half. Spread one half onto a parchment-lined tray and shape it into an oval.

Place the eggs lengthwise in the center, cover with the remaining meat, and form into a loaf. Brush with 2-3 tbsp oil and bake in the preheated oven for 50-60 minutes, turning occasionally.

Ten minutes before the end of baking, scatter fresh rosemary needles over the potatoes. Slice the roast and serve with the rosemary potatoes.
