Italian Christmas Cake

Ingredients
- 1 cube fresh yeast (42 g)
- 1 tbsp sugar
- 150 ml lukewarm milk
- 400 g flour
- 5 egg yolks
- 1 pinch salt
- 150 g soft butter

- 150 g dried fruits (e.g. raisins, dates, figs, lemon zest, orange zest)
- 50 g chopped almonds
- powdered sugar (for dusting)
Instructions

Crumble the yeast into a bowl, stir in the sugar and a little milk until smooth, let rest for 10 minutes. Add the remaining milk, flour, egg yolks, salt and butter, knead into a smooth dough. Cover and let rise in a warm place for about 1 hour.

Line a springform pan with a wide strip of foil to create a higher rim. Grease the pan and foil thoroughly and dust with flour.

Dice the dried fruits and mix them with almonds into the dough. Pour the dough into the pan and cover, letting it rise again for about 30 minutes.

Preheat the oven to 200°C fan. Bake the cake on the lowest rack for about 45 minutes. Let cool for ~20 minutes, then carefully remove from the pan and let cool completely on a wire rack. Dust with powdered sugar before serving.
