Ingredients
- 250 g flour
- 2 tsp Baking soda
- 2 tsp ginger
- 1.5 tsp ground cinnamon
- 0.5 tsp allspice powder
- 1 pinch salt
- 80 g pickled candied ginger
- 100 g butter
- 3 tbsp beetroot syrup
- 175 g cane sugar
- 1 egg
- 50 g sugar (for rolling)
Instructions

Mix flour, baking soda, ginger, cinnamon, allspice and salt in a bowl. Roughly cube the candied ginger.

Melt the butter in a small saucepan and let it cool slightly. Stir in the syrup, sugar and egg. Combine the mixture with the dry ingredients and knead into a smooth dough.

Using a small spoon take portions of dough, shape into balls, roll them in sugar, and place them about 3 cm apart on a parchment-lined baking sheet. Bake in a preheated oven at 180°C (second rack from bottom) for about 10–12 minutes until the cookie surfaces crackle and become crisp. Let cookies cool well on cake racks.
