Ingredients
- 200 g peeled, ground almonds
- 100 g sugar
- 1 pinch Ground cinnamon
- 2 drops bitter almond oil
- 2 egg whites
- Hagelzucker (for sprinkling)

Preheat the oven to 140°C fan.

Mix almonds with 50 g sugar, cinnamon and bitter almond oil. Beat egg whites with a pinch of salt until stiff; gradually add remaining sugar. Continue beating until the mixture is white, glossy and firm. Gently fold in the almond mixture and fill a piping bag with a round tip.

Spoon 40-50 dots onto a baking sheet lined with parchment paper, leaving some space between them.

Sprinkle with Hagelzucker and bake for 10–15 minutes. Turn off the oven and let the cookies dry for about 45 minutes.
