Ingredients

  • 4 slices ciabatta
  • 7 tbsp olive oil
  • 4 tomatoes
  • 1 large red onion
  • 1 cucumber
  • 2 stalks celery
  • 60 g black olives
  • 2 tbsp capers
  • 1 Garlic clove
  • 2 tbsp white balsamic vinegar
  • Salt
  • pepper (from grinder)
  • 2 Handfuls Basil

Instructions

    Cut the bread into large cubes or tear it, then fry in 2-3 tbsp hot olive oil until golden brown; place on paper towels. Wash and dry the tomatoes, cut them into wedges. Peel the onion and slice thinly. Peel the cucumber and dice. Wash the celery, remove the strands, and cut into ~2 cm thick slices.

    Drain the olives and capers. Halve the garlic and rub the bowl with it. Combine all salad ingredients in a large bowl with vinegar, remaining oil, salt, and pepper; mix well. Divide into four small bowls and garnish with bread cubes and fresh basil leaves before serving.
