Italian Bread Salad

Ingredients
- 0.5 cucumber
- 4 tomatoes
- 1 onion
- 1 green bell pepper
- 1 stalk Celery
- 2 Garlic cloves
- 100 g black olives
- 3 sprigs parsley
- 1 lemon
- 3 tbsp white wine vinegar
- 3 tbsp olive oil
- 6 slices white bread
- 50 ml oil
- Salt
- Pepper
- lemon wedges (for garnish)
Instructions

Wash the cucumber, cut it lengthwise in half and scrape out the seeds. Wash the tomatoes, halve them and remove the seeds. Peel and halve the onion. Wash the bell pepper, halve it, remove the seeds and strip off the inner membranes. Dice everything into cubes.

Clean the celery stalk and slice it into rounds. Peel the garlic cloves and crush them. Drain the olives and add them. Wash the parsley, shake it dry and pluck the leaves.

Wash the lemon, halve it and squeeze out the juice. Mix the juice with vinegar and oil and pour over the vegetables, tossing well. Cut the bread into cubes and toast them in oil, lightly salt and pepper, then fold into the salad. Serve in bowls topped with lemon wedges.
