Spoonsparrow's Vegan Bread Salad is a great companion to grilled dishes.

Ingredients

  • 1 small romaine lettuce
  • 2 bell peppers (orange and yellow)
  • 4 tomatoes
  • 1 mild red onion
  • 200 g black olives (pitted)
  • 1 Garlic clove
  • 4 tbsp olive oil
  • Salt
  • 4 slices of stale baguette
  • 1 tbsp Lemon Juice
  • 3 tbsp white balsamic vinegar
  • sugar
  • pepper (ground)
  • 2 tbsp chopped basil

Instructions

    Preheat the oven to grill mode.

    Wash the lettuce, dry it thoroughly and tear into small pieces. Divide among four plates. Wash, clean, and cut the bell peppers into bite‑size chunks. Wash the tomatoes, remove stems, and cut into pieces. Peel the onion and slice thinly. Drain the olives. Peel the garlic and press it into 2 tbsp of oil. Season lightly with salt. Tear or cut the baguette slices into pieces and drizzle with the garlic‑oil mixture. Spread on a baking sheet lined with parchment paper and bake in the oven for about 5 minutes until crisp.

    Whisk together the remaining oil, lemon juice, vinegar, sugar, salt, and pepper to taste. Toss the bread with the vegetables, dressing, and basil, then arrange over the lettuce. Serve immediately.
