Ingredients

  • 1 head of iceberg lettuce
  • 6 thick mixed bread slices
  • 2 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • 200 g Gorgonzola cheese
  • 30 g walnut kernels
  • 4 tbsp quince jam
  • 2 tbsp Apple cider vinegar

Instructions

    Wash, trim and dry the salad. Arrange in bowls. Preheat oven to 220°C fan or conventional heat. Cut bread into large cubes and drizzle with oil. Spread on a parchment-lined tray and roast for about 5 minutes until crisp.

    Let cool briefly, then season with salt and pepper. Dice the cheese into large cubes and combine with walnuts and roasted bread over the salad. Drizzle with quince jam and a splash of vinegar.
