Ingredients

  • 0.5 Ciabatta
  • 4 fresh figs
  • 120 g dried figs
  • 1 large red onion
  • 50 g peeled pine nuts
  • 4 tbsp olive oil
  • 2 tbsp white balsamic vinegar
  • Salt
  • black pepper (freshly ground)
  • 1 tbsp mint

Instructions

    Coarsely break the bread into pieces. Grate the fresh figs and cut them into strips. Slice the dried figs into thin ribbons. Peel, halve, and slice the onion into thin strips. Toast the pine nuts in a dry pan until golden yellow; remove and let cool.

    Combine the bread with the fresh figs, sliced onion, and toasted pine nuts in a bowl. Toss with olive oil and vinegar, then season with salt and pepper. Plate and garnish with mint leaves before serving.
