Italian Amaretti by Spoonsparrow: The classic egg‑white biscuit tastes wonderful with coffee. Buon appetito!
Ingredients
- 2 egg whites
- 100 g sugar
- 200 g peeled, ground almonds
- 0.5 tsp bitter almond flavoring
- 1 tbsp flour
- 2 tbsp powdered sugar (for dusting)

Beat the egg whites with the sugar into a very stiff foam until the mixture is white, shiny and holds its shape.

Mix the almonds with the bitter almond oil and gently fold in; sift the flour over the mixture and carefully incorporate it.

Fill a piping bag fitted with a small round tip with the batter and pipe 40–50 dots onto a parchment‑lined baking sheet, spacing them apart. Dust with powdered sugar and bake in a preheated oven at 150 °C (fan not recommended; gas: level 1–2) for about 15 minutes, keeping the door slightly ajar.

Turn the oven down to 80 °C and allow the Amaretti to dry for 30 minutes. Cool on a wire rack before serving.
