Ingredients

  • 3 egg whites
  • 80 g sugar
  • 2 tsp lemon juice
  • 175 g shredded coconut
  • 100 g dark chocolate (70%)

Instructions

    Beat the egg whites until stiff. Gradually add the sugar and continue beating to stiffness, then fold in the lemon juice. Stir in the shredded coconut.

    Preheat the oven to 150°C with both top and bottom heat.

    Using two teaspoons, place small mounds spaced apart on a baking sheet lined with parchment paper. Wet a pastry brush or your fingertips with water and shape each mound into a pyramid. Bake the macarons in the preheated oven for about 20 minutes; they should only lightly brown, covering them with parchment or foil if necessary. Remove and cool.

    For decoration, roughly chop the chocolate and melt it over a double boiler. Dip the bottom of each macaron into the melted chocolate, place on parchment paper, and let dry.
