Date Macarons

Ingredients
- 4 egg whites
- 1 tbsp Lemon Juice
- a pinch of salt
- 150 g powdered sugar
- 1 tbsp Cornstarch
- 100 g dried, finely chopped dates
- 200 g finely chopped walnuts
- 50 g finely chopped candied orange peel
- 1 tbsp grated orange zest
- 20 ml orange liqueur
- 100 g white couverture chocolate
- 50 g dark couverture chocolate

Preheat the oven to 160°C (320°F) with top and bottom heat. Whip the egg whites until stiff, then fold in the lemon juice and salt. Gradually beat in the powdered sugar and cornstarch, continuing to whip until the mixture is firm, glossy, and holds a sharp peak. Mix the dates, walnuts, candied orange peel, and grated orange zest together, then stir into the meringue with the orange liqueur.

Using two teaspoons, scoop small heaps of the meringue onto a baking sheet lined with parchment paper, spacing them apart. Bake in the preheated oven for about 25 minutes. Remove the macarons and allow them to cool. Melt each type of couverture chocolate separately in a hot, non-boiling water bath for decoration.

Brush the white couverture over the tops of the macarons in streaks. Place the dark couverture into a small zip‑lock bag, cut off a tiny corner, and pipe thin strips onto the cookies. Serve dry.
