Ingredients

  • 50 g candied ginger
  • 200 g Flour
  • 1 tbsp finely ground almond kernels
  • 100 g powdered sugar
  • 150 g butter
  • 1 egg
  • 80 g apricot jam
  • 1 tsp ground ginger
  • 125 g powdered sugar
  • 1 tbsp Lemon Juice
  • candied ginger (for decoration)

Instructions

    Finely chop the candied ginger. Place flour, almonds and powdered sugar on a work surface. Add butter in small pieces and quickly knead with the egg and ginger into a smooth dough. Wrap in cling film and chill for 20 minutes. Preheat the oven to 175 °C. Line a baking tray with parchment paper. Roll out the dough on a floured surface to a thickness of 3‑4 mm. Cut heart shapes and place them on the tray. Bake in the preheated oven for about 12 minutes.

    Warm the jam, strain it through a sieve and mix with the ginger powder. Brush two cookies on each side with the jam mixture and assemble.

    For the glaze, whisk powdered sugar with lemon juice and optionally a little water. Glaze the cooled cookies. Decorate with candied ginger pieces as desired.
