Indian Lentil Salad

We love Indian lentil salad! Try making the juicy lentil salad à la Spoonsparrow.

Ingredients

  • 140 g red lentils
  • 1.5 tsp Garam Masala
  • Salt
  • 1 tsp freshly chopped ginger
  • 0.25 bunch coriander
  • 0.5 untreated lemon (juice)
  • 2 tbsp olive oil

Instructions

    Soak the lentils overnight in plenty of water.

    Drain them the next day, cover with about 600 ml water, add the spices and ginger, bring to a boil, then simmer over medium heat for about 40 minutes; add more water if needed.

    Rinse the coriander, shake dry, set aside four stems, finely chop the leaves from the rest.

    Drain the lentils, let them cool slightly, then mix with lemon juice, oil, and coriander. Season with salt and pepper. Serve garnished with fresh coriander greens.
