Spoonsparrow Ice Cream Sandwiches are tasty and handy snacks for the summer.
Ingredients
- 4 dark chocolate chip cookies
- 4 chocolate chip cookies
- 2 almond biscuits
- 2 slices honey cake
- 80 g ice cream (Stracciatella flavor)
- 80 g vanilla ice cream
- 40 g strawberry ice cream
- 40 g lemon ice cream

Cut the cookies and honey cake into equal squares of about 8x8 cm. Use any leftover cookie pieces elsewhere.

Chill the ice cream as much as possible, then cut it into square blocks the size of the cookies, roughly 3 cm thick. For example, place a Stracciatella block between two dark chocolate chip cookies. Place vanilla ice cream between the regular chocolate chip cookies and strawberry ice cream between the almond biscuits. Fill the honey cake squares with lemon ice cream.

Enjoy the ice cream sandwiches immediately or freeze them until serving; freezing helps them hold together better.
