Honey Walnut Cake

Ingredients
- 70 g raisins
- 70 ml rum
- 300 g floral honey
- 300 g brown sugar
- 150 ml sunflower oil
- 90 g dark chocolate couverture
- Salt
- 0.5 tsp ground cinnamon
- 0.25 tsp ground cloves
- 1 tbsp gingerbread spice mix
- 3 eggs
- 50 g peeled hazelnuts
- 50 g peeled almonds
- 50 g peeled walnuts
- 300 g flour
- 0.5 sachet baking powder
- fat (for the pan)
- 3 tbsp powdered sugar
- 1 tsp lemon juice
- 2 tbsp milk
- 75 g peeled walnut halves (for garnish)

Soak raisins in rum. Preheat oven to 180°C with fan and top heat. In a saucepan combine honey, sugar, and oil; stir until heated. Cook until sugar fully dissolves, then remove from heat and let cool slightly.

Add chocolate, whisk until melted, then add spices, eggs, nuts, and raisins with 2 tbsp rum; mix well. Sift flour with baking powder into the mixture and stir thoroughly. Pour batter into a greased loaf pan and bake in preheated oven for 40–45 minutes.

Remove from oven, let cool briefly, carefully lift out of the pan, and allow to cool completely. Mix powdered sugar with milk and lemon juice; brush over cake surface. Top with walnut halves and let dry. Slice and serve on a plate.
