Ingredients

  • 500 g honey
  • 0.125 l oil
  • 250 g sugar
  • 700 g flour
  • 1 packet baking powder
  • 250 g almonds
  • 2 tsp Cinnamon
  • 1 pinch cloves
  • 0.5 tsp allspice
  • 1 pinch salt
  • 3 eggs
  • 100 g lemon zest
  • 100 g orange zest
  • 3 tbsp condensed milk
  • 100 g almonds
  • Cherries
  • oil (for greasing the baking sheet)

Instructions

    Boil honey, oil and sugar while stirring, then let cool.

    Mix flour, baking powder, almonds, all spices, eggs, lemon zest and orange zest. Add the honey mixture to the dry mix and knead well; if the dough is too soft, add a little more flour. Cover and chill in the refrigerator for 1 hour. Grease a baking sheet. Preheat oven to 200°C. With floured hands press the dough onto the sheet, smooth it out and brush with condensed milk. Cut six by six large squares into the dough with a knife. Decorate each square with almonds and candied cherries.

    Bake the honey cakes on the middle rack for 35–45 minutes until light brown. Let them cool, then remove from the sheet and cut into the marked squares.
