Honey Gingerbread

Ingredients
- 300 g wheat flour
- 1 tsp Baking powder
- 100 g ground hazelnuts
- 125 g ready-to-eat dried plums
- 150 g liquid honey
- 1 egg
- 1 egg yolk
- 3 tsp gingerbread spice mix
- 1 egg (for brushing)
- whole shelled almonds
- 250 g powdered sugar
- food coloring

Mix flour with baking powder and fold in hazelnuts. Remove pits from the dried plums and puree them with a stick blender. Combine plum jam, honey, egg, yolk, and gingerbread spice with the flour mixture using the dough hooks of an electric hand mixer until a firm dough forms. Cover the dough and let it rest at room temperature overnight.

On the next day roll out the dough to about 1 cm thickness and cut out moons, stars, etc., with cookie cutters. Place them on a baking sheet lined with parchment paper. Beat one egg with 2 tbsp water and brush the gingerbread pieces; optionally top with almonds (they can bake). Bake in a preheated oven at 180°C (fan 160°C) for about 20 minutes, then remove and let cool well.

For decoration whisk powdered sugar with 3-4 tbsp water until smooth. Add food coloring as desired and whisk again. Transfer the glaze to small bags, cut off the tip slightly, and use it to decorate or label the gingerbread. Let dry.
