Ingredients

  • 350 g honey
  • 100 g sugar
  • 100 g butter
  • 1 egg
  • 1 untreated lemon (zest)
  • 0.5 tsp cinnamon
  • 0.5 tsp cloves
  • 0.5 tsp Cardamom
  • 0.5 tsp nutmeg
  • 0.5 tsp allspice
  • 0.5 tsp coriander
  • 0.5 tsp ginger
  • 0.5 tsp potash
  • 0.5 tsp hard horn salt
  • 250 g flour
  • 250 g peeled, ground almonds
  • 50 whole peeled almonds
  • 25 g candied orange peel
  • 25 g candied lemon peel
  • 25 g mixed candied lemons
  • 25 g candied cherries
  • 2 tbsp honey

    Heat the honey, sugar and butter over medium heat while stirring constantly until the sugar has completely dissolved. Let it cool to hand temperature. Add the egg, lemon zest and all spices. Dissolve the potash and hard horn salt in 1 tbsp water. Combine with the flour and nuts and fold into the honey mixture. Knead into a firm dough. Wrap the dough in plastic wrap and let rest at room temperature for one day. Knead again. Preheat the oven to 180°C (350°F) with upper and lower heat.

    Roll out the dough on a floured surface to a thickness of 5 mm. Cut circles (4 cm diameter) using a round cutter, place them on a greased and floured baking sheet and top with almonds and candied fruits. Bake in the preheated oven for 15–20 minutes. Remove while still warm from the sheet. Place on a cooling rack, brush with honey water (mix 2 tbsp honey with 2 tbsp water) and let cool. Pack together with some apple slices into well-sealing tin containers. After three to five days the Lebkuchen are fully set and soft.
