Honey Parsnips

The honey parsnips from Spoonsparrow are a wonderfully autumnal side dish with a delicate sweet note.

Ingredients

  • 800 g parsnips
  • 2 tbsp plant oil
  • Salt
  • ground pepper
  • 2 tbsp butter
  • 3 tbsp honey
  • 1 tbsp Lemon Juice

Instructions

    Preheat the oven to 200°C (400°F) with both fan and top heating.

    Peel the parsnips and cut them lengthwise in half. Spread them on a baking tray, drizzle with oil, season with salt and pepper, and bake for about 25 minutes until almost tender, turning halfway through.

    In a small saucepan warm the butter with honey and lemon juice, then brush this glaze over the parsnips. Return to the oven at 240°C (475°F) on top heating or grill mode for about 5 minutes until golden brown. Serve the honey parsnips hot.
