Ingredients

  • 1 tsp butter (for greasing the dish)
  • 1.5 kg fresh cauliflower florets
  • Salt
  • 1 Garlic clove
  • 100 g cheese (e.g., aged cheddar)
  • 100 ml heavy cream
  • 130 g crème fraîche
  • 3 eggs
  • Pepper (freshly ground)
  • nutmeg
  • 60 g bacon slices
  • 40 g walnut kernels

Instructions

    Grease a baking dish. Clean and wash the cauliflower, cut crosswise at the stem. Blanch in salted water for 8–10 minutes until almost cooked. Shock in cold water and drain.

    Peel and finely chop the garlic, grate the cheese, and mix half of it with the garlic, cream, crème fraîche, and eggs. Season with salt, pepper, and nutmeg. Slice the bacon into strips and chop the walnuts.

    Fill the baking dish with cauliflower. Pour the creamy mixture over it and sprinkle with walnuts and bacon. Spread the remaining cheese on top and bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for about 25 minutes. Remove and serve immediately.
