Ingredients

  • 100 g Parboiled Rice
  • 300 g cucumber
  • 400 g honey melon
  • 200 g sheep cheese
  • 100 g mixed nuts
  • 1 bundle chives
  • 75 g crème fraîche
  • 50 ml milk
  • 1 lemon
  • 2 tbsp sweet mango chutney
  • 1 tsp medium-hot mustard
  • iodized salt, pepper

Instructions

    Cook the rice in plenty of water for 20 minutes. Drain into a colander, rinse with cold water and let cool. Wash the cucumber and pat dry. Cut it lengthwise in half and remove seeds.

    Peel the honey melon and cut into small cubes. Cube the sheep cheese into 2 cm thick pieces. Place cucumber, melon, cheese, nuts, and rice in a salad bowl. Slice chives into ribbons for the dressing.

    Whisk together crème fraîche, milk, lemon juice, mango chutney, and mustard. Season with iodized salt and pepper. Pour the dressing over the other ingredients and mix well. Refrigerate for about an hour, then taste again and adjust seasoning if needed.
