Ingredients

  • 300 g basmati rice
  • 3 tbsp ghee (or clarified butter)
  • 40 g sliced almonds
  • 4 cardamom pods
  • 3 Cloves
  • 0.5 cinnamon stick
  • 1 pinch saffron strands
  • 40 g raisins
  • 1 tbsp lime juice
  • Salt

Instructions

    Wash the rice thoroughly in a sieve under running water. Heat the ghee, then sauté the sliced almonds, cardamom, cloves and cinnamon stick while stirring. Add the rice and stir briefly. Add the saffron and pour in about 600 ml water. Bring to a boil, then cover and simmer on very low heat for about 25 minutes.

    Soak the raisins in lukewarm water. Five minutes before the cooking time ends, stir the raisins into the rice, season with lime juice and salt, and serve immediately.
