Honey Elderflower Bread
The tasty bread with elderflowers from Spoonsparrow is easy to bake and perfect for a quick coffee break!
Ingredients
- 400 g spelt flour type 1050
- 100 g Ground Almonds
- 21 g yeast (½ cube)
- 50 g maple syrup
- 120 ml lukewarm milk (3.5% fat)
- 100 g softened butter
- 2 Eggs
- 2 elderflower stalks

Combine the flour and almonds in a bowl, making a well in the center. Sprinkle the yeast into the well and stir with 1 tablespoon maple syrup and 2 tablespoons milk to form a pre‑starter. Cover with a kitchen towel and let rise for 15 minutes in a warm place. Add the remaining maple syrup, milk, butter, and eggs. Set aside a small elderflower stalk, pluck the rest of the flowers and add them to the dough ingredients. Knead everything into a smooth dough and cover again for another hour.

Line a baking tray with parchment paper. Knead the dough once more and shape it on a floured surface into a loaf. Place the elderflower stalk on top. Bake in a preheated oven at 225 °C (fan: 200 °C; gas: level 3–4) for 45–50 minutes. Let the sweet bread cool and serve as desired in a basket.
