Ingredients

  • 100 g cashews
  • 60 g small onions (2 small onions)
  • 1 tbsp Olive Oil
  • 1 tbsp honey
  • 5 dates (dried; pitted)
  • 400 g goat cream cheese (45% fat in the product)
  • Salt
  • Pepper
  • ground cumin
  • 3 stems coriander

Instructions

    Place cashews in a bowl, cover with water and soak for 15 minutes.

    While soaking, peel the onions, halve them and cut into strips. Heat oil in a pan. Sauté onion strips over medium heat for 4 minutes. Add honey and caramelize for 2 more minutes.

    Transfer soaked cashews and 1–2 tbsp of soaking water to a tall container. Add dates, onion mixture and cream cheese, then blend with an immersion blender until smooth. Season with salt, pepper and cumin. Wash coriander, dry shake, chop and sprinkle over the honey‑date dip.
