Ingredients

  • 1 kg waxy potatoes
  • 80 g shallots
  • 3 Garlic cloves
  • 30 g Butter
  • 1 bay leaf
  • 500 ml heavy cream
  • salt, nutmeg, pepper
  • 40 g black truffle (1 black truffle)

Instructions

    Wash, peel, halve the potatoes and slice them thinly. Peel the shallots and dice finely. Peel the garlic and press through a press.

    Melt the butter in a pot, sauté the shallots and garlic over medium heat for 2 minutes until translucent. Add the potatoes and bay leaf, cook another 2 minutes while stirring occasionally. Pour in the cream, season with salt, pepper, and nutmeg. Remove the bay leaf.

    Distribute the potatoes into six small oven‑proof dishes and bake in a preheated oven at 180°C (gas 2–3, fan 160°C) for 20 minutes.

    Just before serving, shave thin slices of truffle over each gratin portion and serve immediately.
