Ingredients
- 2 ripe mangos
- 2 limes
- 1 orange
- 0.5 bunch mint
- 2 egg yolks
- 1 egg
- 50 g sugar
- 30 g liquid honey
- 100 ml Marsala

Peel the mangos and cut the flesh into segments away from the pit. Squeeze the limes and orange to obtain their juices. Wash three mint sprigs, pour both juices over the mango pieces, cover and refrigerate.

Whisk together egg yolks, egg, sugar and honey in a large bowl until creamy. Pour in the Marsala and beat the mixture over a hot water bath until it has doubled in volume. Place the bowl into a cold water bath and chill. Arrange the cream in glasses or bowls with mango pieces. Serve garnished with remaining mint.
