Chestnut Pudding

Ingredients
- 75 g chestnuts (sweet chestnuts)
- 30 g ground hazelnut kernels
- 1 egg
- 30 g sugar
- 30 g Butter

- 250 g mixed frozen berries
- 1 tsp grated lemon zest
- juice of one lemon
- powdered sugar
Instructions

Score chestnuts crosswise, place in boiling water and cook for 20 minutes, drain, cool, and remove shell and skin.

Crush the peeled chestnuts in a bowl into a crumbly mixture.

Separate the egg. Beat the egg white with sugar until stiff peaks form.

Whisk soft butter with the yolk until creamy, fold in chestnuts and hazelnuts, then gently fold in the meringue.

Grease four small molds (cups) and dust them with sugar, fill with the batter, and seal tightly with foil.

Place the molds in a large baking dish, add water up to about 1.5 cm below the rim of the molds, and bake in a preheated oven at 200°C on the lower rack for about 30 minutes.

Heat berries with a little water and simmer for 5 minutes, then puree, seasoning with lemon zest, juice, and powdered sugar.

Serve by pouring the finished pudding onto plates, topping with berry purée and whipped cream.
