Ingredients

  • 130 g honey
  • 120 g sugar
  • 130 g butter
  • 1 egg yolk
  • 300 g flour
  • 10 g gingerbread spice
  • 2 tsp Baking powder
  • 50 g ground almonds
  • 100 g candied cherries
  • almond sticks
  • 250 g powdered sugar
  • 60 back biscuits
  • 50 g candied pineapple
  • 150 g marzipan core

Instructions

    Preheat the oven to 175°C. Warm the honey with sugar and butter slowly until everything is dissolved, then let it cool. Stir the egg yolk into the cooled mixture, then knead in flour, spice, baking powder, and almonds.

    Finely dice the marzipan and pineapple, fold them into the dough, roll out to about 5 mm thickness, cut out 5 cm circles, place on biscuits. Bake at 175°C for about 12–13 minutes, then remove and let cool.

    Make a glaze from powdered sugar and water, brush the honey cakes with it, and decorate with candied cherries and almonds.
