Honey Quark Layer Cake

Ingredients
- 6 Eggs
- 200 g sugar
- 2 tbsp vanilla sugar
- 150 g flour
- 50 g starch
- 2 tsp Baking powder
- 400 g quark
- 200 g Greek yogurt (or cream yogurt)
- 120 g liquid honey
- 1 tbsp orange juice
- 20 ml almond liqueur
- powdered sugar (for dusting)

Preheat the oven to 180°C fan.

Separate the eggs and beat the egg whites into very stiff peaks. Whisk the yolks with the sugar and vanilla sugar. Mix the flour with the starch and baking powder. Fold the meringue into the yolk mixture and sift the dry ingredients over it. Stir in a large mixing bowl until a light batter forms. Butter a flat cake tin (or pizza pan) and spoon the batter into it. Bake for about 10-12 minutes until golden brown. Let cool on a rack. Repeat with the remaining batter to make about nine layers.

For the cream, mix the quark with the yogurt and honey (leave 2 tbsp). Add the orange juice and liqueur.

Place one cake layer on a serving plate and spread a little of the cream over it. Add another layer, brush with cream, and repeat until the cake is assembled. Drizzle the final cream layer with honey, crumble any remaining dough and sprinkle over the cake. Chill for at least 2 hours, then dust with powdered sugar before serving.
