Honey Cake Cookies

Ingredients
- 75 g butter
- 125 g honey
- 125 g Brown sugar
- 50 g ground almonds
- 220 g flour
- 1 tsp gingerbread spice
- 1 pinch lemon zest
- 1 egg
- 0.5 tsp potassium carbonate
- 2 tsp rum
- flour (for working)
- 100 g powdered sugar
- 1 tbsp Lemon Juice
Instructions

Add the butter in pieces with honey and sugar to a pot and heat while stirring until the sugar dissolves. Transfer to a large mixing bowl and let cool. Then add almonds, flour, gingerbread spice, and egg; knead thoroughly with a hand mixer (kneading attachment), adding more flour if needed. In a small bowl whisk potassium carbonate with rum until smooth. Add to dough and continue kneading only until the dough shines and no longer sticks.

Cover the bowl with cling film and let rest overnight in the refrigerator.

Preheat the oven to 180°C fan.

Line a baking tray with parchment paper. Roll out the dough on floured work surface to about 3 mm thickness and cut out hearts. Place on the tray and bake for 10-15 minutes.

Carefully remove from tray and cool on a wire rack.

For decoration, whisk powdered sugar with lemon juice until smooth. Fill a piping bag and decorate the hearts. Let dry.
