Honey Cake

Ingredients

  • 450 ml honey
  • 400 g sugar
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 4 eggs
  • 700 g flour
  • 2 tsp Baking soda
  • 50 g Raisins
  • 5 g powdered sugar (1 tsp)

Instructions

    Add honey, sugar and 400 ml water to a pot and heat until the sugar is fully dissolved. Remove from heat and stir in the spices. Let cool for about 30 minutes.

    Whisk in the eggs. Sift the flour and baking soda together and fold into the mixture. Chop the raisins and fold them in.

    Line a rectangular springform pan with parchment paper and pour in the batter. Bake the honey cake at 200 °C (180 °C fan; gas: level 3) for about 30–40 minutes.

    After baking, dust the hot honey cake with powdered sugar and let it cool on a wire rack.
