Birthday Luck Cake
The luck cake for the birthday of Spoonsparrow turns out especially well as a surprise!
Ingredients
- 150 g butter
- 100 g whole cane sugar
- 4 eggs
- 1 tsp Baking powder
- 200 g Spelt flour Type 1050
- 175 g ground hazelnuts
- 80 g grated dark chocolate
- 2 tbsp mango puree
- 150 g marzipan base
- 2 tbsp powdered sugar from raw cane sugar
- green food coloring
- 50 g dark chocolate
- 50 g Low-Fat Quark
- black and red food coloring

Line a 26 cm springform with parchment paper. Cream the butter with the whole cane sugar until fluffy. Gradually fold in the eggs. Mix baking powder with flour, hazelnuts, and grated chocolate. If the batter is too thick, add a little milk. Pour the batter into the springform, smooth the top, and bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for about 50 minutes (test with a skewer). Remove, let cool briefly, lift out of the pan, and transfer to a wire rack. Let it cool completely.

Cut a cloverleaf stencil roughly the size of the springform. Place it on the cake and cut around it into a clover shape. Save the leftover cake pieces. Spread the mango puree over the cake. Knead the marzipan with 1 tbsp powdered sugar and green food coloring until smooth. Roll out on a work surface and use the stencil to cut a cloverleaf. Place it on the cake.

Melt the dark chocolate and, using a small squeeze bottle, draw contours onto the cake cloverleaf. From the cake pieces and quark knead a moldable mixture (add more quark if needed) and shape ladybugs as desired. Mix the remaining powdered sugar with a little water to make a glaze. Color about two-thirds of the mixture red, leave the rest black, and coat the ladybugs with it for decoration. Paint eyes with the leftover white glaze. Place them on the cake and dust with powdered sugar if desired.
