Homemade Sandwich Ice

Sandwich ice homemade goes very easy with the foolproof recipe from Spoonsparrow.
Ingredients
- 1 untreated lemon
- 600 g fresh blueberries
- 1 Tbsp vanilla sugar
- 75 g sugar
- 250 g low-fat quark
- 200 ml whipping cream
- 24 round wafer cones

Grate the lemon zest and squeeze out the juice. Wash the blueberries and pat dry. Roughly half of them, together with vanilla sugar, sugar, lemon zest, and juice, blend finely in a mixer. Stir in the quark well, then fold in the whipped cream with the remaining berries. Pour the mixture into a shallow dish, cover, and freeze for at least 4 hours.

Using a round cutter about 7 cm in diameter (optionally rinse it under hot water first), cut out ice shapes. Place each shape between two waffle cones and serve immediately.
