Homemade Granola

Ingredients
- 100 g walnuts
- 0.5 Vanilla pod
- 200 g hearty rolled oats
- 200 g rye flakes
- 40 g sunflower seeds
- 2 tbsp coconut flakes
- 0.5 tsp ground cinnamon
- 45 g butter (3 tbsp)
- 3 tbsp maple syrup
- 30 g cornflakes (unsweetened)
- 50 g freeze‑dried raspberries
Instructions

Coarsely chop the walnuts. Split the vanilla pod lengthwise and scrape out the seeds. Combine walnuts, vanilla seeds, oats, rye flakes, sunflower seeds, coconut flakes and cinnamon in a mixing bowl and stir well.

Melt the butter in a small saucepan over low heat. Mix the melted butter and maple syrup into the oat mixture.

Spread the batter evenly onto a baking sheet lined with parchment paper. Bake in a preheated oven at 160 °C (fan‑forced 140 °C; gas: level 2) for 20–25 minutes until golden brown, stirring every 5 minutes and redistributing as needed.

When the granola is golden brown, remove the sheet from the oven and let it cool for 10 minutes. Then fold in the cornflakes and freeze‑dried raspberries and transfer to a storage jar.
