Plum Spread

The plum spread from Spoonsparrow is tender and full-bodied in flavor.

Ingredients

  • 1 kg ripe plums
  • 1 kg fruit sugar (ratio 1:1)
  • 50 ml grape juice
  • 1 lemon (juice)

Instructions

    Clean jars and lids thoroughly: sterilize in boiling water for about 10 minutes and let drain on a clean towel.

    Wash and pit the plums. Puree half, cut the rest into small pieces. Add lemon juice and fruit sugar, mix well and let sit for at least 1 hour. Transfer all ingredients to a pot and slowly bring to a gentle boil while stirring. Add grape juice and simmer for about 4 minutes, bubbling.

    Perform a gel test. Fill jars up to the rim with plum spread, seal, and place on a damp kitchen towel upside down for about 15 minutes to cool. Then turn upright and let continue cooling.
