Ingredients
- 12 elderflower buds
- 1 egg
- 75 ml dry white wine
- 100 ml whipping cream
- 125 g flour
- 1 tbsp sugar
- 1 tsp vanilla sugar
- 0.5 tsp grated orange zest
- 2 tbsp liquid butter
- a pinch of salt
- 1 l vegetable oil (for frying)
- powdered sugar (for dusting)
Instructions

Do not wash the elderflower buds, just shake and dry them.

Separate the egg; whisk the yolk with wine, cream, flour, sugar, vanilla sugar, and orange zest into a smooth dough. Fold in the butter and let the dough rest for about 20 minutes.

Beat the egg white with a pinch of salt until stiff peaks form, then fold it into the dough. Gently press the elderflower buds through the dough. Heat the oil in a pot; it is ready when bubbles rise on a wooden spoon. Fry the buds one at a time in hot fat.

Drain the fritters on paper towels and dust with powdered sugar before serving.
