Ingredients

  • 140 ml milk
  • 80 g flour
  • 30 g liquid butter
  • 30 g sugar
  • 2 Eggs
  • 1 egg yolk
  • 1 tbsp Lemon Juice
  • a pinch salt
  • 3 tbsp clarified butter (for baking)
  • 250 g fresh raspberries
  • 2 tbsp sugar

Instructions

    Prepare a crepe batter from the dough ingredients and let it rest for 20 minutes. Heat the clarified butter in a small pan and bake the crepes one by one. Keep the finished crepes warm in an oven at 70°C.

    Blend the raspberries, then add sugar and 100 ml water to a saucepan, bring to a boil, cover and simmer for 1 minute. Strain through a sieve and chill in the refrigerator.
