Ingredients

  • 8 elderflower buds
  • 100 g flour
  • 1 pinch salt
  • 1 tbsp sugar
  • 1 tsp vanilla sugar
  • bio orange zest
  • 150 ml white wine
  • 20 ml orange liqueur
  • 2 tbsp liquid butter
  • 2 egg whites
  • 1 l oil (for frying)
  • powdered sugar

Instructions

    Gently shake the elderflower buds in cold water, then drain on kitchen paper.

    Combine flour, salt, sugar, vanilla sugar and orange zest; whisk in wine, liqueur and butter, then let rest for 20 minutes.

    Beat egg whites until stiff and fold into the batter. Dip elderflowers into the batter and fry in hot oil until golden yellow. Dust with powdered sugar.
