- 250 g butter
- 2 egg yolks
- 4 tbsp dry white wine
- 1 tbsp Lemon Juice
- Salt
- 0.5 bunch Basil
- white pepper (from grinder)

Melt the butter and skim off the foam. In a metal bowl, whisk the egg yolks and wine over a hot water bath until frothy; remove from heat. Gradually add the melted butter in thin streams while continuously stirring until a creamy sauce forms. The egg mixture must not curdle.

Finally wash the basil, shake dry, pluck the leaves and chop. Fold into the sauce and season with lemon juice, salt, and pepper.
