Ingredients
- 6 mild matjes fillets
- 300 g beetroot (canned)
- 2 Apples
- 1 Red Onion
- chives sprigs (for garnish)
- 1 egg yolk
- Salt
- 1 tsp sharp mustard
- 175 ml neutral plant oil (e.g., sunflower oil)
- 1 tsp lemon juice

For the mayonnaise, place the egg yolk with a pinch of salt and mustard in a bowl. Whisk with a whisk and gradually drizzle the oil in thin streams while stirring until thick and glossy. Season with lemon juice and salt.

Pat the matjes dry and cut into strips. Drain the beetroot and slice into fine ribbons. Wash, peel, quarter, core, and cut the apples into sticks. Peel, halve, and slice the onion. Combine all salad ingredients and arrange on a plate. Garnish with chives and drizzle with mayonnaise before serving.
