Salad with Dried Beef

Ingredients
- 250 g steak
- 125 ml rice vinegar
- 2 Garlic cloves
- 40 g sugar
- 2 tbsp Soy sauce
- 1 tbsp oregano (fresh chopped)
- 1 tbsp mint (fresh chopped)
- pepper (ground)
- 100 g cooked glass noodles
- 8 iceberg lettuce leaves
- 1 diced chili pepper
- juice of one lime

Briefly freeze the steak, then slice it into very thin strips. Mix rice vinegar with minced garlic, sugar, 2 tbsp soy sauce, herbs and pepper well. Toss the meat in the mixture and refrigerate overnight.

Pat the meat dry and spread on a rack; let it dry at 80°C with the oven door slightly ajar for 2–3 hours.

Distribute the dried beef with cooked glass noodles and mint leaves onto the iceberg lettuce leaves, season with some chili pepper and lime juice, then roll into bundles.
