Feta Orange and Soybean Sprout Salad

Ingredients
- 2 oranges
- 0.5 Swiss chard
- 1 handful mung bean sprouts
- 125 g sheep cheese (Greek sheep cheese)
- 4 black olives (pitted)
- Salt
- Pepper (freshly ground)
- 1 tbsp balsamic vinegar
- 2 tbsp olive oil
Instructions

Peel the oranges with a sharp knife, removing all white membranes. Then cut along the inner membranes to create beautiful fillets. Catch the juice that pours out and squeeze any fruit remnants. Arrange the orange fillets on two plates.

Whisk the vinegar with 2 tbsp of orange juice, salt, pepper, and then fold in the oil.

Cut the feta into cubes.

Wash, trim, dry, and cut the salad into about 2 cm wide strips. Rinse the mung bean sprouts, drain them, and mix them in. Slice the olives lengthwise into small slivers and add them with the feta cubes to the salad.

Just before serving, toss the vinaigrette under the salad. Arrange the salad on top of the oranges.
