Ingredients

  • 6 herring
  • 2 carrots
  • 2 onions
  • 1 Garlic clove
  • 1 untreated lemon
  • 0.5 l apple cider vinegar
  • 2 parsley sprigs

Instructions

    Have the fishmonger remove the guts from the herring, rinse thoroughly and pat dry.

    Peel and wash the carrots, then cut them into slightly diagonal slices. Peel the onions and slice them thinly into rings.

    Line a fire‑proof dish with the carrots and onions, place the herring on top. Slice the lemon thinly and layer between the parsley sprigs. Bring the vinegar to a boil. Preheat the oven to 150 °C.

    Pour the hot vinegar broth over the herring and bake in the oven for about 30 minutes. Baste repeatedly with the broth. Let the herring cool in the broth and serve with the broth.
