Marinated Fried Herring

Ingredients
- juice of one lemon
- 1.2 kg small green herrings (pre-cooked)
- Salt
- pepper (ground)
- 4 tbsp flour
- butter shortening (for frying)
- 250 ml white wine vinegar
- 100 g sugar
- Salt
- 1 Tbsp white peppercorns
- 2 tbsp mustard seeds
- 1 tsp allspice berries
- 2 Bay leaves
- 3 onions

Drizzle the herrings inside and out with lemon juice and let sit for 30 minutes. Salt and pepper the herrings, then coat them in flour. Heat butter shortening in a pan and fry the herrings about 4 minutes per side until golden brown.

For the brine, bring 750 ml water with vinegar, sugar, 1 tsp salt, the spice berries and bay leaves to a boil for a few minutes. Peel onions, slice thinly into rings, and add them. Taste the broth, pour it over the herrings, let it cool. Place the herrings in an elongated bowl. Pour the brine over them, cover and leave 1-2 days in a cool place (not in the fridge as they will harden).
